Grandma’s Carrot Cake Revamped Submit Your Recipe
 
 
Ingredients:

2 cups organic whole wheat flour

2 teapoons baking powder

1½ teaspoons baking soda

1½ teaspoons sea salt

2 teaspoons ground cinnamon

1 cup Wholesome Sweeteners Fair Trade Organic Sugar

½ cup Wholesome Sweeteners Fair Trade Light Brown Sugar

 

¾ cup olive oil*

¾ cup organic apple sauce (any flavor)

4 beaten eggs*

 

2 cups grated carrots

8.5oz crushed pineapple (drained)

½-1 cups chopped walnuts

 

1 stick organic unsalted butter

8oz cream cheese

1 teaspoon vanilla extract

16 oz. Wholesome Sweeteners Fair Trade Organic Powdered Sugar

 
Directions :

Preheat oven to 325°F. 

Sift together flour, baking powder, baking soda, sea salt, cinnamon, and organic and light brown sugar.

In a separate bowl, mix olive oil, apple sauce and eggs, then add to sifted ingredients.

In another bowl, combine the carrots, pineapple and walnuts, then fold into the mixture 

Bake for 1 hour. Cool well before frosting.

Beat butter, cream cheese and vanilla , then add the powdered sugar and frost accordingly.

 

*Vegan/low cholesterol alternative: replace eggs with a mixture of 4T Ground Flax Seeds + 12 T water. Reduce Oil to 1/2C.
