Preheat oven to 325°F.
Sift together flour, baking powder, baking soda, sea salt, cinnamon, and organic and light brown sugar.
In a separate bowl, mix olive oil, apple sauce and eggs, then add to sifted ingredients.
In another bowl, combine the carrots, pineapple and walnuts, then fold into the mixture
Bake for 1 hour. Cool well before frosting.
Beat butter, cream cheese and vanilla , then add the powdered sugar and frost accordingly.
*Vegan/low cholesterol alternative: replace eggs with a mixture of 4T Ground Flax Seeds + 12 T water. Reduce Oil to 1/2C. |
