Preheat oven to 400°F.
In small bowl, combine the honey, lemon juice, lemon zest, cumin and cinnamon until thoroughly blended. Loosen the skin from the meat. Spoon half of glaze under the chicken skin, then slide lemon slices under skin. Truss the chicken. Brush the remaining glaze over the chicken. Bake at 425°F for an hour, or just until its juices run clear. If the chicken browns too quickly, please cover with foil.
Let the chicken set for about 10 minutes before serving.
Serve with or without lemon slices and garnish with flat-leaf parsley.
(If using a cut-up chicken, bake at 350°F for 25 to 30 minutes.) |
