Preheat oven to 400. Lightly butter a 9" square baking pan.
In a large bowl, mix dry ingredients together.
In a small bowl, mix egg, oil and kefir together, beating lightly. Then blend wet ingredients into dry ingredients, stirring until just moist. Pour batter into prepared pan.
Bake for 20 minutes, until cake is golden and toothpick inserted in center comes out clean. Serve warm with jam, honey or maple syrup.
