Peel and cut apples into quarters or substantial slices. Layer in the bottom of a glass baking dish. Sprinkle currants over them, then Sucanat mixed with cinnamon; dot with small dollops of butter. Cover the bottom of the dish with water, adding a little fresh-squeezed lemon juice if the apples are not tart enough. Bake at 350 degrees until tender. If the apples have not absorbed enough water, add a little cornstarch to the broth and stir to thicken. Serve hot or cool with shipped cream. |
