Piggy Cookies Submit Your Recipe
 
 
These are a New Year's tradition for some of us. Pork brings good luck, but since no one said it had to be a real pork, we offer our favorite vegetarian porcine option, Piggy Cookies. Because pigs browse with a forward motion, in many European and Latin American cultures they represent prosperity and abundance. (Chickens, on the other hand, are considered a far less fortunate dining choice for New Year’s—they scratch for food in a backward motion and can fly away from you! Avoid things "chicken" on New Year's Day!)
 
Ingredients:

1¼ cups packed Wholesome Sweeteners Fair Trade Organic Dark Brown Sugar

¼ cup shortening

2 eggs

¼ cup milk

1½ teaspoons vanilla extract

1½ teaspoons baking soda

1½ teaspoons ground cinnamon

1 cup Wholesome Sweeteners Fair Trade Organic Molasses

6 cups all-purpose unbleached all-purpose flour

 

Marzipan or royal icing for decorations
 
Directions :

Preheat the oven to 350°F. Line cookie sheets with parchment paper.

 

In a large mixing bowl, cream together brown sugar and shortening until smooth. Mix in 1 egg, milk, and vanilla until smooth. Stir in the baking soda, cinnamon, and molasses. Mix in flour until the dough is stiff enough to form into a log and refrigerate for at least an hour. (Or if using a cookie cutter, mix the dough until it's stiff enough to roll out.)

 

Slice the dough into ¼-inch rounds. (Or cut into cookies using a simple round or pig-shaped cookie cutter.) Place the cookies 2 inches apart on the prepared baking sheets. Brush the remaining beaten egg over the tops of the cookies.

 

Bake for 15 to 17 minutes in the preheated oven, or until the edges of the cookies are lightly browned and centers of the cookies are dry. Cool completely and decorate!

 

Many culinary stores sell great piggy cookie cutters, or you can simply cut a round cookie, as we did above, and give it a sweet piggy face!
