Yellow Squash Spice Cake Submit Your Recipe
 
 
This keeps well and is a moist, healthy treat. I have been baking this for over 30 years. It is one of the few ways I can get non-vegetable eaters to add squash to their diet without even knowing it!
 
Ingredients:
1½ cups bread flour
1 teaspoon baking powder
½ teaspoon baking soda
1½ teaspoons cinnamon
½ teaspoon nutmeg
¼ teaspoon ground cloves
½ teaspoon salt
 
2 beaten eggs
2/3 cup grapeseed or canola oil
2 teaspoons pure vanilla extract
 
1½ cups shredded, peeled yellow squash
 
Directions :
Preheat oven to 350°F. Line the bottom of an 8 X 8 inch baking pan with parchment paper. Spray the inside of the pan with canola oil.
 
In a large mixing bowl, stir together bread flour, baking powder, baking soda, cinnamon, nutmeg,  ground cloves and salt. In another bowl, mix the eggs, raw cane sugar, oil,  and vanilla extract. Mix the dry and wet ingredients together in the large bowl. Add the squash.
 
Pour into pan and bake 45 minutes. Let cool before removing from pan.
