Trisha says: This is a great recipe to fix on a weeknight, it's quick to make with leftover rice and goes with any main dish. It's so delicious and hearty I often pair it with steamed broccoli for a meatless main dish. Cooking healthy food is my passion. I love to surprise people who don't think healthy can taste good.
 
Ingredients:

3 cups cooked brown rice

2 tablespoons butter

1 cup chopped onion

3 cloves garlic, finely minced

1 cup slice mushrooms

˝ cup raisins

˝ cup chopped dried apricots

˝  cup chicken or vegetable broth

2 Tablespoons Wholesome Sweeteners Fair Trade Organic Sugar

2 Tablespoons soy sauce
 
Directions :

In a large skillet heat butter over medium high heat and sauté onion, garlic and mushrooms for 5 minutes or until just tender.   Add rice, raisins, apricots, broth, sugar and soy sauce.  Reduce heat and simmer until liquid is absorbed, about 8-10 minutes. 

 

Makes 6-8 servings.
