Pioneer Woman's Apricot Bars Submit Your Recipe
 
 
We found Ree, the Pioneer Woman, at www.thepioneerwoman.com. Ree is big city girl married to a cattle rancher and living on the Great Plains. Her days are filled with her adored (and, frankly, adorable) family, wild horses, calves bawling, big wagging dogs, mountains of laundry and COOKING! Her web site alone is worth a serious browse ... and this recipe is delicious. As Ree told us: Go make it this weekend!
 
Ingredients:
1½  cups all purpose flour
1 teaspoon baking powder
½ teaspoon sea salt
1½ cups oats
1 cup packed Wholesome Sweeteners Fair Trade Organic Light Brown Sugar or Organic Sucanat
1¾  sticks butter, cut into pieces
1 10- to 12-ounce jar apricot preserves (organic if possible)
 
Directions :

Mix all ingredients except apricot preserves. Press half of the mixture into a buttered 8-inch square (or small rectangular) pan. Spread with the apricot preserves. Sprinkle second half of mixture over the top and pat lightly. Bake at 350 for 30 - 40 minutes or until light brown. Let cool completely, then cut into squares.

Suggestions : When fresh fruit is in season, consider replacing the preserves with sliced apricots, peaches or even apples and sprinkle with brown sugar, then proceed as recommended in the recipe.
