Cashew, Raisin & Mango Bread Submit Your Recipe
 
 
Radelle says: This recipe came from my Mother's friend (many years ago). Last year, we converted it by removing the processed sugar and replacing it with Wholesome Sweetener products. We also use egg substitute rather than eggs (except for the egg white). For some reason, we always seem to make the bread around Thanksgiving. It's a nice sweet bread to complement a turkey dinner.
 
Ingredients:

¾ cup all-purpose flour

1¼ cups whole wheat flour

2 teaspoons baking soda

½ teaspoon sea salt

1¼ cups Wholesome Sweeteners Fair Trade Organic Sucanat

¼ cup Wholesome Sweeteners Fair Trade Organic Light Brown Sugar

¾ cup vegetable oil

3 cage-free organic eggs or egg substitute, slightly beaten with a fork

1 cage-free organic egg white, slightly beaten with a fork

1½ teaspoons vanilla extract

1/3 cup raisins

1½  cups chopped (and peeled) fresh mango

¾ cup chopped, salted cashews

 

¼  cup Wholesome Sweeteners Fair Trade Organic Powered Sugar, for dusting top of bread

 
Directions :

Preheat oven to 350° F. Grease and flour 4 small loaf pans (6" x 3¾" x 2¼" each.)

 

In a large bowl, mix all ingredients except the powdered sugar until well incorporated. Spoon mixture into the loaf pans until approximately ¾-full. Allow loaves to rest for 30 minutes before baking.

 

Bake for approximately an hour or until a toothpick inserted in the center comes out clean. Remove from oven and cool on a wire rack. Once bread is cool, dust the tops of each loaf with the powdered sugar. 

 

Yield: 4 loaves or 16 servings.
