Preheat oven to 350 degrees F. Spray a 9x5-inch loaf pan with olive oil cooking spray. Combine soymilk and lemon juice in a small glass measuring cup and set aside.
In a medium bowl, combine pastry flour, oats, baking powder, baking soda, cinnamon and salt. Stir in chocolate chips and set aside.
In a large bowl, blend applesauce with bananas. Add sugar, mixing well. In a small bowl, whisk egg replacer powder with water until foamy. Add to applesauce mixture with vanilla and soymilk mixture, and mix thoroughly. Fold the dry ingredients into the liquid, stirring just until mixed. Pour batter into prepared pan.
For the topping: In a small bowl, combine the soy grits, SUCANAT and cinnamon. Distribute evenly over batter, and sprinkle with nutmeg. Bake for 55 minutes, or until tester inserted in middle comes out clean.
