2 ½ cups spelt or whole wheat flour
1 tablespoon baking powder
½ cup canola oil
1 cup Wholesome Sweeteners Organic Sucanat
1 medium zucchini, finely shredded
½ cup chopped pecans, optional
½ cup oats
½ teaspoon sea salt
1 tablespoon cinnamon
Mix dry ingredients together. Mix liquid ingredients and add to dry. Mix with spoon only until moistened. Bake in lined muffin tins at 400 degrees F for 20 to 25 minutes.
Makes about 18 to 24 muffs.
Freezes well.
