Scary Halloween Pizza Submit Your Recipe
 
 
Ingredients:

Makes 1 pie

 

Pizza Sauce:

1 tablespoon olive oil

1 small organic onion, chopped

1 large organic garlic clove, minced

1 15-ounce can organic tomato puree, drained

1 4-ounce can organic tomato paste

¼ cup water

1 ½ teaspoons Wholesome Sweeteners Organic Sucanat

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

 

Pizza Dough:

1 ¼-ounce package active dry yeast

1 teaspoon Wholesome Sweeteners Organic Sucanat

1 cup warm water (tap water that feels warm on you hand – not hot)

2 tablespoons olive oil

1 teaspoon salt

2 ½ cups unbleached all-purpose flour, plus more for rolling the dough

 

To assemble the pizza:

10 ounces grated soy mozzarella cheese

5 tablespoons olive oil

Cornmeal

Unbleached flour

 
Directions :

In a large saucepan over medium heat, heat the oil.  Add the onion and sauté about 3 minutes, or until translucent, stirring with a wooden spoon.  Add the garlic and sauté for 1 minute, stirring constantly.  Reduce the heat to low.  Add the tomato puree, tomato paste, water, Sucanat, oregano, basil, salt and pepper.  Turn the heat to high and bring to a boil, stirring constantly.  Turn heat back to low and simmer the sauce for 30 minutes, stirring occasionally.  While the sauce is cooking, make the pizza dough.  When the sauce is done, remove from the heat and set it aside.

 

In a large bowl, mix the yeast, Sucanat, and warm water, stirring with the spoon until the yeast dissolves.  Stir in the oil, salt, and flour.  When the dough becomes too stiff to stir, flour your hands and a work surface.  Transfer the dough to the work surface.  Gather the dough together in your hands and knead the dough:  gently press the dough with the palms of your hands, pushing part of it away from you.  Fold the dough back over the dough nearest you and pat into a loose circle.  Turn the circle a quarter turn and knead again.  Do this for 8 to 10 minutes, adding a little flour to keep it from sticking.  When the dough is kneaded enough, it will feel soft and smooth and no longer sticky.  Dust the dough with flour and put it on a plate.  Cover with a kitchen towel and let the dough sit and rise in a warm place until doubled in volume, about 1 hour.

 

Place the oven rack in the lowest position in your oven.  If you have a pizza stone, put it on the rack.  Preheat the oven to 500 degrees F.

 

Grease 2 pizza pans with olive oil and dust the pans lightly with cornmeal.  Sprinkle you hands with flour.  Form the dough into 2 round patties and place each on an oiled pan.  Let the dough rest for 5 minutes.  With you hands, press the dough over the bottom of the pan, forming a 10-to12-inch circle.  (Or dust a rolling pin with flour and roll the dough into a circle.)  With a spoon, spread the pizza sauce (all of it or less, depending on your taste) evenly over the dough circle.  Sprinkle the circles with the soy mozzarella cheese.  Using a large spoon, drizzle a little (about 1 tablespoon) olive oil over the top of each pizza.  If you want to add extra toppings, sprinkle them on now.  Place the pans on the lower rack of the oven and bake until the cheese is melted, about 10 minutes.
