½ cup canola oil
½ cup butter, softened
¾ cup chunky natural peanut butter
2 cups Wholesome Sweeteners’ Organic Sucanat
2 cage-free eggs
2 teaspoons vanilla
1 teaspoon baking powder
1 teaspoon baking soda
1 ½ cups oat flour
Cream oil, butter, peanut butter and Sucanat. Add eggs and vanilla. Mix dry ingredients together and add to creamed mixture. Drop by tablespoons on ungreased cookie sheets and bake 10 to 12 minutes at 350 degrees.
Makes about 4 dozen.
