Filling: In a mixing bowl, combine peaches, sugar, arrowroot, and lemon extract and mix well. Pour filling into a lightly oiled 8 x 12-inch baking pan and set aside.
Topping: In a mixing bowl, combine flours, baking powder, salt and cinnamon and mix well. In another bowl, combine water, agavey, oil, and vanilla extract and mix well. Add dry ingredients to the wet and whisk together until well blended.
Assembling the cobbler: Preheat the oven to 375 degrees F. Pour the topping over filling and bake for 30 minutes or until the top is lightly browned and the cobbler seems a little springy. Remove pan and let cool. Serve with dollops of whipping cream. |
