Preheat the oven to 375 degrees F.
In a medium saucepan, combine the 1 cup water, the oil, Sucanat, and salt and bring to a boil over medium-high heat. Remove the mixture from the pan and transfer to a large mixing bowl. Stir in the matzo meal. Stir in the egg, then the whites, 2 at a time, beating until the mixture is smooth before adding more whites. Using two spoons, form the dough into 2-inch balls. Arrange the balls on a lightly greased baking sheet, keeping 3 inches between each. Using a fork dipped in water, smooth the tops of the rolls. Bake the rolls until puffed and golden brown, about 40 to 50 minutes. |
