In a heavy saucepan, combine Sucanat, cornstarch and salt.Stir in milk over medium heat, cook and stir until thick and bubbly.Stir 2 minutes more.Remove from heat.Gradually stir in 1-2 cups of the hot mixture into eggs and yolk.
Return all the mixture to the pan.Cook and stir 2 minutes.Remove from heat, stir in butter and vanilla until the butter melts.Place clear wrap directly onto pudding and cover pan with another sheet of clear wrap.Chill without stirring.
