Oatmeal Chocolate Chip Cake Submit Your Recipe
 
 
Ingredients:

1 ¾ cups boiling water

1 cup rolled oats

1 1/3 cup Wholesome Sweeteners’ Organic Sucanat

½ cup oil

2 cage-free eggs

2 cups spelt or whole wheat pastry flour

1 teaspoon baking soda

½ teaspoon sea salt

1 tablespoon cocoa or carob chips

Chopped pecans, optional
 
Directions :
Pour boiling water over oats.  Cover and let set while measuring other ingredients.  Mix dry ingredients together.  Add sweetener, oil, eggs, dry mixture and oats.  Blend well.  Pour into prepared 9 x 13-inch pan (or lined muffin tins or two 9-inch pans).  Top with a sprinkle of chips and nuts.  Bake 9 x 13-inch pan at 350 degrees F for 30 to 40 minutes or until done (less for small pans).
