Brandied Peach Custard Submit Your Recipe
 
 
Ingredients:

4 fresh peaches, peeled and diced

1/3 cup apricot brandy

1 cup enriched soymilk 1% fat

3 rounded tablespoons agar flakes

1 (12.3 ounce package) lite silken tofu

3/4 cup chopped dried apricots

1 cup fresh orange juice

1 1/4 cup Wholesome Sweeteners’ Organic Sugar

1 tablespoon pure vanilla extract


Topping:
2 tablespoons low fat granola

1/4 teaspoon ground cinnamon

1/8 teaspoon ground nutmeg

1 1/2  teaspoons Wholesome Sweeteners’ Organic SUCANAT

 
Directions :
Preheat oven to 350°.
Combine peaches and brandy in a medium saucepan over medium high heat. Bring mixture to a boil, reduce heat to medium low, and cook for 10 minutes, or until liquid is thickened and has the consistency of a syrup. Set aside. In a glass measuring cup, combine the soymilk and agar, and heat in the microwave 1 minute, or in a small saucepan, for 3 minutes. Set aside. Place tofu in food processor and blend. Add apricots and process.  Add orange juice and thickened soymilk, sugar, and vanilla, and blend until smooth.  Pour into 2 quart oven-safe casserole dish and fold in peaches.  In a small bowl, combine granola, cinnamon, nutmeg, and SUCANAT.   Sprinkle over custard and bake 30 minutes or until lightly browned. Serve warm or cold.  Refrigerate covered.
