Preheat the oven to 350 degrees F.
To make the crust, in a large bowl, sift the flour and Sucanat together. Blend in the soy margarine until the mixture clings together. Press the mixture into a 13 x 9 x 2-inch pan. Bake for 15 to 20 minutes, or until lightly browned.
To make the filling, in a medium bowl, beat together the eggs, Sucanat, and lemon or orange juice. Sift together the flour and baking powder and stir into the egg mixture. Pour over the baked crust and bake for 25 minutes, or until the top has set. Cool and cut into bars. |
