Jamaican Cakes Submit Your Recipe
 
 
Ingredients:

4 cups grated fresh coconut

1 ˝ cups water

3 ˝ teaspoons peeled and chopped ginger

1 cup Wholesome Sweeteners’ Organic Sucanat

1 stick of cinnamon

1 cup brown rice syrup
 
Directions :

Blend together 2 cups of coconut, the water, and ginger in a bowl.  Set aside.

 

In a small saucepan, combine 1 cup of coconut, the Sucanat, cinnamon, brown rice syrup, and coconut-ginger mixture.  Cook over a low heat until the mixture thickens (about 2 hours).  Stir occasionally to prevent burning.  Set aside to cool.

 

When the mixture has cooled enough to handle it, form small spherical cakes (each 2 inches in diameter), or smaller confections (each 1 inch in diameter), rolling the mixture by hand.  Then roll each ball in the remaing 1 cup of coconut.
