In a mixer add water, yeast, Sucanat, olive oil, salt. Mix on low speed 5 minutes. Turn off and wipe down sides. Add 6 cups flour, mix on low speed until all is incorporated. Let knead 2 minutes. Dough should form a ball and pull away from walls. If too sticky, dust with flour mix and repeat above. Once dough is ready, cover with plastic wrap. Let stand at room temperature, let rise until it is doubled in size, punch down. Roll out to the pan of your choice. You may use corn meal on bottom or olive oil.
Roll dough to ˝ inch thickness and place in pan. You may put on ingredients such as vegetables and cheese. Let rise ˝ hour and bake at 350 degrees F for 18 minutes or until crust is golden brown. Serve hot or at room temperature. Different option when making dough: you may add dried or fresh herbs. For different flavors, try basil or thyme. |
