Carrot Spice Cookies Submit Your Recipe
 
 
Ingredients:

Makes 18 to 24 cookies

1/2 cup Wholesome Sweeteners Organic Sucanat

1/2 cup maple syrup

1/2 cup soy milk

3 tablespoons sesame seeds

2 tablespoons oil

1 teaspoon vanilla

1 cup grated carrots (about 4 to 5 small)

1 teaspoon grated fresh ginger

1 1/4 cup whole wheat flour

1/2 cup soy, amaranth, or brown rice flour

1 teaspoon baking powder

1/4 teaspoon salt

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

 
Directions :

Mix the first 8 ingredients (through the ginger) in a bowl.  In a separate bowl, mix all the remaining ingredients.  Preheat oven to 325 degrees.  Gradually beat Sucanat mixture into flour mixture until well mixed.  Dollop with teaspoon onto oiled baking sheets.  Bake for 15 minutes or until golden brown.
