4 ears of fresh organic corn, kernels shaved from the cob (about 3 cups)
4 large organic shallots, cut into ¼-inch slices
Pinch of Wholesome Sweeteners' Organic Sucanat
Kosher salt and freshly ground black pepper
2 tablespoons minced fresh organic thyme leaves
Directions :
In a large sauté pan over medium heat, melt the margarine.Add the corn, shallots, Sucanat, and salt and pepper to taste.Cook, stirring occasionally, until the corn is caramelized, about 5 minutes. Stir in the thyme and cook 5 minutes more, or until all the flavors are combined.Season to taste with salt and pepper.
