Cape Cod Cranberry Bread Submit Your Recipe
 
 
Ingredients:

2 cups unbleached sifted flour

½ cup Wholesome Sweeteners’ Organic SUCANAT

1 tablespoon baking powder

½ teaspoon salt

2/3 cup fresh orange juice

2 cage-free eggs, slightly beaten

3 tablespoons unsalted butter, melted

½ cup chopped walnuts

1 ¼ cups cranberries

2 teaspoon grated orange rind
 
Directions :

Preheat oven to 350 degrees F.

 

Butter a bread loaf pan.

 

Sift flour, SUCANAT, baking powder and salt into a mixing bowl.  Make a hole in the center of the mixture and pour in orange juice, eggs and melted butter.  Mix well; fold in cranberries, walnuts and orange rind.  Pour batter into pan.  Bake in a preheated oven at 350 degrees F for 45 to 50 minutes or until a knife comes out clean.  Cool in pan for 10 minutes.  Remove to wire rack and allow to cool completely before serving.
