3 medium red peppers, diced
1 small red onion, diced
4 cans (15 ounces each) black eyed peas, rinsed and drained well
2 packages (10 ounces each) frozen peas, thawed and drained
¼ cup olive oil
1/3 cup cider vinegar
2 teaspoons Wholesome Sweeteners Fair Trade Organic Sucanat
2 teaspoons fresh thyme
1½ teaspoons salt
½ teaspoon pepper
Combine all ingredients except tomatoes. Cover and refrigerate for at least 3 hours. To serve, arrange sliced tomatoes and salad on platter. Serves 10 to 15.
