Braised Red Cabbage with Juniper Submit Your Recipe
 
 
Ingredients:

1 medium red cabbage

2 large onions, chopped

1 lb cooking apples, peeled, cored and chopped

1 clove garlic, crushed

1/2 teaspoon grated nutmeg

1/4 teaspoon ground cloves (optional)

1 tablespoon juniper berries, finely chopped

3 tablespoons Billington's Dark Brown Molasses Sugar

3 tablespoons red wine vinegar

1 tablespoon lemon juice

1/4 stick butter or soy margarine

Sea salt and freshly ground pepper

 
Directions :

Preheat the oven to 300 degrees F.

 

Shred the cabbage leaves finely – you can do this in a food processor.

 

Layer the cabbage, onions and apples, in a greased ovenproof dish or casserole, sprinkling each layer with the garlic, spices and molasses sugar.

 

Mix the wine vinegar with the lemon juice and pour over the contents of the dish.  Dot with the butter and cover tightly.

 

Cook for 2-2.5 hours, stirring once during the cooking time.

 

Serve with roast meats, game, sausages, casserole or nut roast.
