1 ½ lbs (peeled and cored weight) mixed winter fruits such as cranberries, blueberries, apples and pears
¼ cup rum or orange juice
Grated rind of 1 orange
½ cup Billington’s Natural Light Brown Muscovado Sugar or Wholesome Sweeteners Fair Trade Organic Light Brown Sugar
1 teaspoon ground cinnamon
Pinch ground mixed spice
Ingredients for the crumble:
5/8 cup plain flour
¾ stick butter
3/8 cup Billington’s Natural Milled Golden Cane Sugar or Wholesome Sweeteners Fair Trade Organic Sugar
3/8 cup roasted hazelnuts or walnuts, finely chopped
Preheat the oven to 400 degrees F.
Cut the fruit into thick slices.
Stir in the rum, orange rind, sugar and spices, mixing well. Place the mixture in a greased ovenproof pie dish.
Rub the butter into the flour until the mixture resembles fine breadcrumbs, and then stir in the sugar, hazelnuts and spices.
Sprinkle evenly over the fruit and bake for about 30 minutes until golden brown.
Serve with cream or custard.
