Preheat the oven to 400 degrees F. In a mixing bowl combine all the ingredients (except the boiled sweets) to form a pliable dough. Cover with cling film and chill for 45 minutes.
Roll out the dough about 1/8th of an inch thick on a floured surface and cut into seasonal shapes with cookie cutters. Place the cookies on baking trays lined with non-stick baking paper. Stamp or cut out a small hole in each cookie and place a piece of boiled sweet (or half each of 2 contrasting colors) in each hole. Bake for about 7 minutes, until the sweets have melted and the cookies are cooked. Leave to cool on the tray.
Variation:
These cookies can be made for any occasion, not only Christmas. For Valentine’s Day or Birthdays you could make heart shaped cookies. Let your imagination decide.
