Preheat the oven to 350° F. Line a large roasting pan with foil and coat with non-stick cooking spray. Place the turkey in the pan and season with salt and pepper. In a medium bowl, combine the sugar and orange juice; mix well then pour over the turkey. Place the orange slices on and around the turkey. Lightly cover with aluminum foil and roast for 3½ hours, basting occasionally. Remove the foil and roast for 30 to 60 minutes more, basting occasionally, until no pink remains and the juices run clear. Allow to sit for at least 15 minutes before carving.
