Preheat oven to 325º F.
1. Place first 6 ingredients in large mixing bowl.
2. Place liquid ingredients in a small bowl and whisk to combine.
3. Pour the wet ingredients into the dry ingredients and mix with a fork until combined.
4. Drop 1 Tblsp. portions of batter onto a parchment-lined cookie sheet.
5. Bake 8 - 10 minutes until lightly golden around the edges. Remove from oven and set aside for 2 minutes.
6. Transfer cookies to wire rack and allow to cool. Store in a covered container.
VARIATIONS: For wheat-free cookies, substitute 1 cup organic barley flour for whole wheat pastry flour. For lower fat cookies, use 3 Tblsp. organic canola oil and 3 Tblsp. organic applesauce. Substitute carob chips for chocolate chips, if desired. |
