Fresh Peach Butter Submit Your Recipe
 
 
Ingredients:

1 1/2 pounds ripe peaches

1/2 cup Billington's Light Brown Muscovado Sugar

1/2 vanilla bean

1/2 teaspoon ground cloves

 
Directions :

Bring a large pot of water to a boil.  Drop the peaches in the water until the skin loosesn, 1 to 3 minutes (the riper the peaches the less time it takes).  Put the peaches in a bowl of ice water and peel off the skins.  Remove the pits.

 

Put the peach flesh in a heavy saucepan with the sugar, vanilla bean and cloves.  Bring to a simmer over low heat and cook, covered, for about 10 minutes, until the peaches are soft.  Remove the vanilla bean.  Mash the fruit by hand for chunky butter or puree in a food processor for a smooth butter.
