Apple (or Pear) Butter Submit Your Recipe
 
 
This is delicious smeared over a warm English muffin or pancakes. It's a delicious way to start the day.
 
Ingredients:

2 pounds cooking apples or pears, peeled and cored
1 cinnamon stick
1 cup Billington's Light Brown Muscovado Sugar
Grated zest of 1 lemon
½ teaspoon ground cloves
Apple juice

 
Directions :
In a heavy saucepan, combine the fruit, cinnamon stick, brown sugar, lemon zest and cloves.  Add enough apple juice just to cover, and bring it to a simmer.  Cook, uncovered, until the fruit is soft, 15 to 30 minutes.  Strain off any excess juices and remove the cinnamon stick.  Mash by hand for a chunky butter or in a food processor for a smooth butter.
