Prepare the crust:
Preheat oven to 350° F (175° C).
In a large bowl, cream butter and confectioners' sugar until light and fluffy. Stir together flour and baking powder; blend into butter mixture. Pat into a pie plate.
Bake in preheated oven for 12 to 15 minutes, or until edges are lightly browned.
Let the crust cool.
Meanwhile, increase the oven temperature to 400° F (200° C).
In a large bowl, beat the evaporated milk and sugar with a whisk or electric mixer for 10 to 15 minutes, or until fluffy. Pour into the shortbread crust.
Bake for 10 minutes in the preheated oven. The tart will have a sticky soft surface, and will set completely as it cools. Serve chilled. |
