Steve S. recently shared this recipe for a Gypsy Tart, a very simple, classic English tart that originates in the northeast corner of the county of Kent, just south of London. Steve notes that "It's not for dieters or dental planning," but it's delicious and easy!
 
Ingredients:

Crust:
1 cup organic unsalted butter
½ cup Wholesome Sweeteners Fair Trade Organic Powdered Sugar
2 cups all-purpose flour
¼  teaspoon baking powder

Filling:
1 (12 ounce) can evaporated milk
1½ cups Billington's Dark Molasses Sugar or Wholesome Sweeteners Fair Trade Organic Dark Brown Sugar

 
Directions :

Prepare the crust:

Preheat oven to 350° F (175° C).

In a large bowl, cream butter and confectioners' sugar until light and fluffy. Stir together flour and baking powder; blend into butter mixture. Pat into a pie plate.

Bake in preheated oven for 12 to 15 minutes, or until edges are lightly browned.

Let the crust cool.

Meanwhile, increase the oven temperature to 400° F (200° C).

In a large bowl, beat the evaporated milk and sugar with a whisk or electric mixer for 10 to 15 minutes, or until fluffy. Pour into the shortbread crust.

Bake for 10 minutes in the preheated oven. The tart will have a sticky soft surface, and will set completely as it cools. Serve chilled.
