Preheat the oven to 375 degrees F.
Cut four 12-inch squares of foil and brush each square lightly with some of the oil.
Place a fish fillet on each foil square.
Combine the remaining oil, sherry vinegar, soy sauce and chili paste or hot sauce. Spoon the mixture evenly over each portion of fish.
Wrap loosely in foil, sealing the edges well.
Place the foil parcels on a baking sheet. Bake for 15-20 minutes or until the fish flakes easily with a fork.
Open the parcels carefully and serve hot.
