Score the pork rind deeply with a sharp knife and insert cloves into the spaces.
Heat the Garden Jelly gently until runny and brush over the pork rind.
Sprinkle with the sugar, salt and pepper.
Place the joint in a roisting tin and cook for 10-15 minutes at 425 degrees F.
Cover the meat with foil and reduce the oven temperature to 375 degrees F and roast the pork for 25 minutes per pound, plus 25 minutes extra.
Remove the foil 20 minutes before the end of cooking and allow to rest for 15 minutes before carving.
Garden Jelly Recipe
Ingredients: Japonicas, Water, Cloves, Billington's Natural Milled Golden Cane Sugar
Method: Chop and de-pip the japonicas. Place in a pan and just cover with water. Add the cloves and cook until soft. Strain through a jelly bag. To each pint of liquid, add 1 lb sugar. Whent he sugar has completely dissolved, bring to boil and cook until set - about 15-20 minutes. Skim off any scum and pour into war sterilized jars. |
