Place ginger in a medium saucepot. Using a vegetable peeler, peel the orange zest into the pot avoiding any white pith. Cut the oranges in half and squeeze in the juice. Add water and Organic Zero. Bring to a boil, then reduce to medium heat and simmer for 10 minutes. Strain through a fine sieve. Chill in an ice bath.
Once cool, pour 1½ cup into a tall glass filled with ice. Top with club soda and serve.
