Grate a 1oz piece of peeled ginger root into 5 ½ cups of boiling water.Add the grated zest of 3 large scrubbed lemons.Squeeze the juice from 6 lemons and add this to the bowl.Stir in ½ cup Billington’s Milled Golden Cane Sugar and stir well.Cover the bowl and leave for at least 5 hours or overnight.Strain the lemonade through a sieve to remove the bits of ginger.Serve diluted with sparkling mineral water and plenty of ice.You can add more sugar after sieving, if you prefer it sweeter.
