Preheat oven to 375°F.
To prepare the cookies: Cream the butter and 1 cup of the powdered sugar until fluffy and pale. Slowly add the flour, salt and vanilla until all is incorporated. Add the pecans. Rake the dough in your hand and roll into finger sized rolls. Shape into crescents. Dust heavily with 1 cup of powdered sugar.
Bake for 10-12 minutes. Dust with the remaining cup of powdered sugar. Cool completely before removing from trays.
Notes from the Sugar Club:
Plugra butter is made with a higher fat content than most American butter (82.5% butterfat). It gives your recipes a richer flavor and lower water content, and is used by some chefs in place of normal butter. The name "Plugra" is derived from the French plus gras ("more fat").
Some cooks prefer to use almonds instead of pecans in these melt-in-your-mouth delicious cookies. |
