Combine, egg yolks, Organic Zero, tequila, key lime juice and lime zest in a small bowl over a pot of simmering water and, whisking gently but constantly, cook until the mixure is pale and thick, approximately 8 minutes
Transfer to mixer and mix on high until room temperature.
Fold in whipped cream.
In a clean and dry mixing bowl whip whites with a pinch of salt until stiff peaks form.
Fold into lime mixture.
Pour into desired ramekins or molds.
Freeze for 5 hours before serving.
