In a large pot combine the pearl barley and water and bring to a boil, turn down heat to low and simmer for 30 minutes.
Strain through a medium sieve. While still warm, add the Organic Zero to dissolve.
Using a vegetable peeler, peel the lemon zest into the liquid (avoiding any of the white of the lemon). Add the juice of two of the lemons. Let set for 10 minutes.
Strain and keep in an airtight container in the fridge.
