Jamaican Mango Cake
 
 
Ingredients:

2 cups organic flour


½ teaspoon salt


¾ teaspoon baking soda


½ teaspoon baking powder


¾ cup butter, softened


1½ cups Wholesome Sweeteners Organic Zero


2 eggs


¼ cup buttermilk


1 cup mashed mango (may use fresh or bottled mango)


1 teaspoon vanilla extract

 
Directions :

Preheat oven to 350°F


 


Lightly coat a bundt pan with additional butter. Sift flour, salt, soda and baking powder into a medium bowl.  In a large bowl, cream butter and Organic Zero, then add eggs and buttermilk. Stir in flour just until moistened, then stir in mango and vanilla. 


 


Pour into pan and bake for 70 to 75 minutes. Remove when a knife inserted in center comes out clean.  Let cool on rack for 10 minutes, then invert onto serving tray.
