Chocolate Coconut Mango Bread
 
 
Ingredients:

2 cups all-purpose organic unbleached flour


1½ cups Wholesome Sweeteners Organic Zero


2 tsps baking soda


½ tsp sea salt


3 large cage-free organic eggs, lightly beaten


¾ cup vegetable oil


2 teaspoons vanilla extract


2 cups chopped fresh mango


½ cup sweetened flaked coconut


1 cup semi-sweet chocolate chips

 
Directions :

Preheat oven to 350°F and grease two 8x4 inch loaf pans.


 


In a large bowl, combine the flour, Organic Zero, baking soda and salt.


 


In a medium size bowl, whisk together eggs, oil and vanilla; slowly add the egg mixture to the flour mixture, stirring just until moistened. Stir in mango and remaining ingredients.


 


Pour batter into prepared loaf pans and bake for 50 minutes or until a toothpick inserted in center comes out clean.


 


Yield: Makes 2 loaves.
