Pumpkin Bran Muffins
 
 
Ingredients:

2 cups organic whole wheat flour


½ cup organic all purpose flour


2 cups unprocessed bran


1 cup Wholesome Sweeteners Organic Zero


2 Tbsp baking powder


2 tsp cinnamon


1/2 tsp sea salt


1 can organic pumpkin


¾ cup organic milk


½ cup canola oil


2 cage-free eggs beaten

 
Directions :

Pre-heat oven to 400°.


 


Grease bottoms of muffin tins or spray with cooking spray. In large bowl combine dry ingredients. In medium bowl combine the rest of ingredients. Add wet ingredients all at once to the dry. Mix until moist (don’t over mix).


 


If using mini muffin tins bake 8 to 10 mins or until knife in center comes out almost clean


If using regular muffin tins bake 18 to 20 mins or until knife comes out almost clean.


 


Cool on rack for 5 mins.


 


Yield: about 48 minis and 24 regular. You can cut recipe in half.
