Margarita Souffle Glace
 
 
Ingredients:

8 whole free-range eggs, separated


2 cups organic whipped cream -- beaten to medium peaks, kept cold, set aside


4 Tablespoons Organic Zero


4 Tablespoons  Patron Tequila (or substitute your personal favorite)


6 ounces freshly squeezed organic key lime juice


grated zest of 3 organic limes

1 Tablespoon freshly squeezed organic orange juice
 
Directions :

Combine, egg yolks, Organic Zero, tequila, key lime juice and lime zest in a small bowl over a pot of simmering water and, whisking gently but constantly, cook until the mixure is pale and thick, approximately 8 minutes


 


Transfer to mixer and mix on high until room temperature.


 


Fold in whipped cream.


 


In a clean and dry mixing bowl whip whites with a pinch of salt until stiff peaks form.


 


Fold into lime mixture.


 


Pour into desired ramekins or molds.


 


Freeze for 5 hours before serving.


 


Yield: 8 servings


Preparation time: 45 minutes
