Clementines in Mint Syrup
 
 
Ingredients:

6 clementines, peeled and sectioned, white strings removed


1 1/2 cups Wholesome Sweeteners Organic Turbinado Sugar or Billington's Demerara Sugar


1/2 cup honey


1 tablespoon fresh mint leaves, chopped


Fresh mint leaves for garnish

 
Directions :

Put clementines in a heat-proof bowl.


 


Combien 4 cups water, sguar, honey and chopped mint in a saucepan and bring to a boil.  Immediately pour mixtuer through a strainer into bowl with clementines.  Let cool to room temperature, cover and chill until serving.  Garnish with mint leaves before serving.


 


Makes 6 to 8 servings.
