Baked Apples with Butterscotch Sauce
 
 
Ingredients:

1 stick of butter
½ cup
Billington's Light Brown Muscovado Sugar
½ cup dried cranberries
½ cup walnuts
4 tablespoons cider or apple juice
1 teaspoon ground cinnamon (optional)
4 large organic apples


 


Ingredients for the butterscotch sauce:
1 stick unsalted butter
½ cup Billington's Light Brown Muscovado Sugar
½ cup double cream
½ teaspoon vanilla extract

 
Directions :

Preheat the oven to 400° F.


 


Cream 2/3 of the butter with the sugar until soft.  Stir in the cranberries and walnuts.


Wash and core the apples and place them in a greased ovenproof baking dish.  Score round the middle of each apple with a sharp knife - this helps to prevent the apples from bursting during cooking.


 


Spoon the mixture into the center of each apple.  Dot with the remaining butter and sprinkle with the cinnamon if using.  Pour the cider or apple juice over and around the apples.  Cook for 15-20 minutes or until soft.


 


Make the sauce:  Put all the ingredients into a pan over a low heat and stir until the butter has melted and the sugar has dissolved.


 


Bring to the boil and boil the sauce for about 3-4 minutes - as it boils the sauce will thicken.  Remove the apples from the oven and serve with the sauce.


 


Serves 4.
