Barbecue Chicken with Homemade Sauce
 
 
Ingredients:

1 onion, minced


2 garlic cloves, minced


2 tablespoons olive oil


¼ teaspoon sea salt (optional)


1 Tablespoon chili powder


2 Tablespoons Wholesome Sweeteners Organic Blackstrap Molasses


2 Tablespoons Wholesome Sweeteners Organic Sucanat


2 to 4 tablespoons Wholesome Sweeteners Pancake & Waffle Syrup (optional, if you want more sweetness)


4 Tablespoons balsamic or other vinegar


4 Tablespoons vegetarian Worcestershire sauce


1 cup fruit juice – sweetened catsup


1 teaspoon Tabasco or your favorite hot sauce

1 pound organic free-range chicken legs and breasts, washed and dried
 
Directions :

In a medium saucepan over high heat, sauté the onion and garlic with the olive oil until soft.  Add the remaining ingredients (except for the chicken) and 2 cups water.  Mix well (or blend in a blender for a few seconds).  Simmer the sauce over medium-low heat for 30 to 60 minutes, or until it reaches the desired thickness.  Cool.  In a large bowl, cover the chicken with the sauce on all sides and marinate for 1 hour, refrigerated and covered.  Grill on medium-high heat, turning for 15 to 20 minutes on each side, until the chicken is cooked.
