Banana Bread
 
 
Ingredients:

Makes 1 loaf


8 Tablespoons soy margarine, room temperature


¾ cup Wholesome Sweeteners Fair Trade Organic Sucanat®


2 cage-free eggs


1 cup unbleached all-purpose flour


1 teaspoon baking soda


½ teaspoon sea salt


1 cup whole wheat flour or unbleached all-purpose flour


3 large, ripe bananas, mashed


1 teaspoon vanilla extract

 
Directions :

Preheat over to 350 degrees.  Grease a 9 x 5 x 3-inch bread pan.


Cream soy margarine and Sucanat until light and fluffy.  Add eggs, one at a time, beating well after each addition.


Sift all-purpose flour, baking soda and salt together, stir in whole wheat flour and add to creamed mixture, mixing well.  Fold in bananas and vanilla.


Pour mixture into the prepared pan.  Bake for 50 to 60 minutes, or until a toothpick inserted in the center comes our clean.  Cool in pan for 10 minutes, then on rack.
