Preheat the oven to 375°F.
Combine the flour, Sucanat, maple sugar, chopped nuts, and cinnamon in a medium bowl. Cut in the soy margarine with a pastry blender or two forks until the mixture resembles coarse meal. Set aside. Place the apple slices in an 8-inch square baking dish coated with cooking spray. Drop the preserves by teaspoonfuls on top and sprinkle evenly with the flour mixture. Bake for 35 minutes, or until bubbly and golden.
