Bravo’s Top Chef Master
Congratulations to Rick Bayless, chef-owner of Chicago's renowned Mexican food havens Frontera Grill, Topolobampo and Xoco, for winning Bravo’s Top Chef Masters. Chef Bayless and Executive Pastry Chef Melissa Novak use copious amounts of the good sweet stuff, provided by Wholesome Sweeteners, in their award winning recipes.
As one of the most ardent advocates for local and sustainable foods, Rick’s $110,000 First Prize, will go to the Frontera Farmer Foundation, which supports small Midwestern family farms. Rick believes "that small local farms promote biodiversity by planting a wide range of produce, are more likely to use organic practices, and add immeasurably to the fabric of their communities--local farmers bring a distinctly artisanal approach to agriculture, and insure the highest quality of food." We agree, and offer this tip: when in Chicago … do as Chicagoans do! Drop into Frontera or Topolobampo for dinner, or Xoco for a sweet snack. We promise, it'll be a meal you won't soon forget ... and the Frontera Farmer Foundation will continue to reap the benefits.
In 2005, Wholesome Sweeteners pioneered Fair Trade Certification for sweeteners. Our first contracts for Fair Trade Certified sugars were with farmers cooperatives in Malawi, Africa and another country. That's the answer to this month’s Where in the World mystery.

What a bake sale! Mortgage Apple Cakes (as seen on CNN, Fox, NBC, and more)
Speaking of the golden rule (see "School Days" above), we don't often mention media coverage of Wholesome's products here, but this is such a great story of "do unto others" that we wanted to share it with you.
Large bags of Wholesome’s Fair Trade Organic Sugar were on the small screen across the country in July--along with apples, flour and secret spices. It's all part of an inspiring story about New Jersey mother of three, Angela Logan, who literally had a bake sale to save her home. With the family recipe for her kids' favorite cake, one oven, and four baking tins, she started baking. As her story spread among friends and neighbors, it was eventually shared with news media and, in no time commercial kitchens stepped in eager to help, too. Within a couple of weeks, she'd sold more than 400 hundred cakes, saving her home, and in the process starting a new and very successful business venture, one that gives back (a portion of the proceeds from her sales go to non-profits that help other families facing similar situations). For Wholesome Sweeteners, "Organic" means that our producers meet or exceed the USDA's National Organic Program standards for growing, harvesting and milling cane and agave, and collecting honey. Farmers don't use synthetic chemicals on the crops or hives; we let the trimmings lay where they fall to restore nutrients and help the soil retain moisture; we don't burn our crops before harvesting, and we recycle everything we can--from the spent cane that fuels our mills to the excess beeswax left over from the honey harvest, which is molded into honeycomb-formed plates and slipped into the hive boxes to help the bees build new hives each spring.
